This dish can be found on the menu of almost all restaurants and has a unique taste due to the use of certain spices! I have made just a slight change in this recipe by adding all three coloured bell peppers instead of just green one!

Ingredients and spices that need to be Get to make Kadhai Paneer:

  1. 200 gm Paneer (Cottage Cheese)
  2. 1/2 tsp Garlic paste
  3. 1/2 tsp Ginger paste
  4. 1/8 tsp Turmeric powder
  5. 1/2 tsp Kashmiri Red chilli powder
  6. 1/4 tsp Garam Masala powder
  7. 1/4 tsp Kasuri methi (dry fenugreek leaves)
  8. 1/2 tsp Sugar
  9. 2 tbsp Milk
  10. to taste Salt
  11. 2 tbsp Oil Or Butter... As per preferrence
  12. To be ground into a paste :
  13. 2 Medium Onions sliced
  14. 2 Large Tomatoes chopped
  15. 1/4 cup Cashewnuts
  16. 1 tbsp Oil or Butter
  17. Whole spices for tempering :
  18. 2 Cloves
  19. 2 Green Cardamoms
  20. 1 Black Cardamom
  21. 2 inch Cinnamon
  22. 1 Bay leaf
  23. Spices to be pound to a coarse powder :
  24. 1 tbsp Coriander seeds
  25. 1/2 tsp Cumin seeds
  26. 2-3 Spicy Dry red chillies …..deseeded
  27. To be cubed :
  28. 1/4Medium Onion
  29. 1/4 Red Bell Pepper
  30. 1/4 Green Bell Pepper
  31. 1/4 Yellow Bell Pepper
  32. For Garnishing :
  33. 1/4 tsp Ginger julienes
  34. 2 tbsp Coriander leaves chopped

Steps to make to make Kadhai Paneer

  1. To make Kadhai Paneer, first heat oil in a saucepan and add the cashewnuts, sliced onions. Saute for a while.
  2. When they turn translucent, add the chopped tomatoes and saute. Cook till tomatoes are a bit soft.
  3. Cool and grind in a mixer grinder to get a smooth paste.
  4. Pound the coriander seeds, cumin seeds and the dry red chillies in a mortar and pestle to get a slightly coarse powder. The same can be attained by just giving a quick whizz in a mixer grinder.
  5. Heat the oil in a heavy bottomed pan and saute the paneer cubes very lightly. Keep aside till further use.
  6. In the same pan heat some more oil and add all the whole spices mentioned above.
  7. When they splutter add the ginger garlic paste and saute. Now add the coarse spice powder and saute.
  8. Immediately add the cubed onions and saute. Add the cubed bell peppers and mix well. Saute for a while until the vegetables are soft and cooked.
  9. Now add the prepared paste and mix well. To this add the turmeric powder, red chilli powder, garam masala, sugar, crushed kasuri methi and mix.
  10. Add a little water to get a slightly thick consistency and bring to a boil. Add the paneer cubes and the milk and stir. Add salt to taste. Cook for a few more minutes.
  11. Garnish with ginger julienes and chopped coriander leaves and serve the delicious Kadhai Paneer with some parathas or jeera rice and sliced onions or raita to compliment it.

Before you realize it you will realize that you have greater energy and a greater understanding of overall health than you'd have envisioned before changing your eating customs.
