  5. 1/2 tsp. fennel seeds
  6. milk as required
  7. 1/2 cup evaporated milk
  8. sugar to taste for the instant rabri
  9. ghee for shallow frying
  10. 3/4 cup brown sugar for the syrup
  11. 2-3 pinches cardamom powder
  12. 4-5 cardamoms
  13. 1 tsp. chopped nuts

Steps to make to make Shahi Malpua

  1. In a bowl, mix together sooji (semolina),
  2. .......maida,
  3. Grind the brown sugar along with the cardamom into a powder.
  4. Add the ground sugar.
  5. .....1 1/2 tbsps. fresh grated coconut.
  6. Also add sugar & cardamom powder. Mix well.
  7. Add required quantity of milk....
  8. ...and form a batter of pouring consistency. Set aside for 30 minutes.
  9. To make the sugar syrup, grind the sugar along with the cardamoms.
  10. Add this to the pan....
  11. ...along with water & cardamoms. Simmer till slightly thick. Keep aside.
  12. Mix the batter well again. Adjust water if required.
  13. Look at the consistency of the batter. It should be of pouring consistency.
  14. Add the fennel seeds and give it a mix.
  15. Heat some ghee in a pan and pour two ladleful of the batter.
  16. Fry on both sides till light golden in colour.
  17. Transfer on to a plate.
  18. Dip them into the sugar syrup for a few seconds till well coated.
  19. Arrange on a serving plate and serve......
  20. ........topped with the instant rabri and chopped nuts.
